happy st. patty's day!

happy st. patricks day!
today we realized that we don't even really know what st. patricks day is. looked it up and this is what we got from our google search:
1. march 17th is the day st. patrick died
2. st. patrick was not irish
3. st. patrick's color was blue

therefore, the fact that we celebrate this "irish" man with the color green, makes no sense.

anyhow, despite our confusion, we decided to celebrate by trying out this super good lemon pistachio cupcake recipe. sharing it with you because they are AWESOME - not one to love cupcakes but these were pretty darn good. we found this recipe online but changed quite a few things...i mean, when you only buy 1 package of pistachio instant pudding and it calls for two, its okay to use 1 package of lemon that we found in the back of the pantry from 2006 in its place right? so, here's what you will need: (from our revised version)

~ 1 cup of pistachios ~ 1 box of white cake mix ~ 1 package instant lemon pudding ~ 1 package instant pistachio pudding ~ 1/3 cup vegetable oil ~ 1 1/4 water ~ 3 large eggs ~ 2 cups heavy whipping cream ~ 1/3 cup white sugar preheat oven to 350 and place cupcake liners in cupcake pan grind pistachios in food processor or blender.
combine cake mix and its ingredients according to package directions
add in pudding mix and combine well. gently stir in ground pistachios into batter (save some for on top of the frosting) hopefully you're pudding isn't from 2006, but you know what?! if it is, its totally fine-we are still alive!
fill cupcake liners about 2/3 full and bake about 18 minutes or until cupcakes are done
in a mixing bowl, mix the cream and the white sugar until fluffy. (no pictures, whoops)
dollop your preferred amount of the frosting on the cupcake and sprinkle rest of pistachio grounds and zested lemon onto the top.
SO GOOD! go try them out! you won't be disappointed.
